Chironji payasam is a an innovative popular Kerala Style Payasam recipe that is extensively used in festivals and marriages. Keto chironji payasam is made from chironji (Almondette) and Almond Milk. It is relatively easy to prepare compared to traditional Payasam which needs lots of time and effort to prepare.
Ingredients for Keto Chironji payasam(10 servings)
- Chironji – 250 grams
- Water – 1 cup
- Almond Milk – 3 cups
- Stevia – 1 cup
- Ghee – 1 cup
- Cardamom – ½ spoon
- Coconut Sliced in small pieces – 3 spoons
- Chocolate food colour ( optional for real looks)
Bringing it all together:
Heat the rest ½ cup ghee in a thick bottom pan and add almond milk
Cook and add stevia 1 cup, Cardamom powder and let it boil and keep stirring till soft
Add the cooked Chironji to this boiling milk and add 5 drops of Chocolate food colour to make it look like jaggery payasam
Keep stirring for atleast 10 minutes in medium flame, till the chironji is fully incorporated and sweetened
If the consistency gets too think, add water to loosen it a bit and continue stirring
Finally add fried coconut slices to the mixture and serve after bit cooled.
Roughly one serving will contain 4 grams of carbs, so have only one serving in a day to avoid exiting from ketosis.
